Gluten adalah protein utama dari gandum. Ini adalah pembentuk utama seitan, makanan yang terkenal di dunia vegan dan vegetarian sebagai pengganti daging.

Di Cina, seitan dikenal dengan nama miàn jīn (面筋), sedangkan di Korea sebagai milgogi (밀고기).

Seitan dibuat dari adonan tepung gandum yang dicuci dengan air sampai semua butiran patinya hilang, menyisakan adonan yang kenyal dan lengket, tetapi tak larut dalam air. Kemudian, adonan tersebut dibekukan sehingga harus dipotong-potong terlebih dahulu sebelum dimasak.

Makanan ini pertama kali muncul pada abad ke-6 sebagai salah satu bahan di dalam masakan mi dari Cina, dan kini sangat populer di kawasan Asia Timur serta Asia Selatan.

 

Awalnya, makanan ini muncul di Cina karena ajaran Buddha yang tak memperbolehkan makan daging, membuat seitan sebagai penggantinya.

Nama "seitan" baru dikenal publik pada 1961 di Jepang berkat George Oshawa, seorang ahli diet makorbiotik. Produk ini lalu dipasarkan dengan nama seitan dan diekspor sampai ke barat.

Sama seperti daging, seitan bisa dimasak dengan berbagai cara, karena bahannya yang mudah menyerap bumbu dan rempah-rempah.

Menurut hallo sehat, seitan juga kaya akan protein. Satu porsi seitan mengandung setara dengan protein dari ayam atau daging sapi.

Selain itu, seitan memiliki karbohidrat yang sangat rendah, akibat proses yang membuat patinya hilang, cocok untuk menurunkan berat badan.

Meski begitu, terlalu banyak makan seitan juga dikatakan tak baik. Juga bagi orang yang alergi terhadap gluten, tak disarankan mengonsumsi seitan.
